Cucumber Tomato Salad
Stay cool as a cucumber with this light, refreshing, citrus-y dish. This cucumber salad only requires four ingredients, which you probably already have cooling and chilling in your fridge. Years ago, when I worked as a marketing & event coordinator for a health food store, I would curate a variety of wellness focused workshops and cooking classes. One of the coordinators from our sister location would visit my store to host vegan-friendly cooking classes. This is one of the recipes she shared. In this recipe, she used a vegetable spiralizer to turn the cucumbers into a noodle texture. Spiralizing the cucumbers are completely optional, but doing so adds for an aesthetically-pleasing touch. Either way, this salad is flavorful and simple! You can pair this as a side for your next lunch. Or make this for your next gathering at home.
Ingredients
3 cucumbers
1 pint of cherry or grape tomatoes
2 lemons
1 calm shell of dill
Sprinkle of cheese (optional)
Sprinkle of salt & pepper (optional)
Tools
Cutting board
Large serving bowl
Spiralizer or vegetable peeler (optional)
Knife
Citrus juicer
Instructions
Cut the ends of the cucumber on your cutting board. Set the blade of the spiralizer to your desired noodle shape/thickness. Place your cucumber in the spiralizer, and start spinning the handle in a clockwise motion. Your cucumber should now be a long, slender, thin spiral. Set your cucumber noodles aside in a strainer while preparing the other ingredients. We recommend pressing the noodles down with paper towel to get rid of the excess cucumber noodle juice.
Next, juice your lemons. Pour the lemon juice in your large serving bowl.
Cut your tomatoes in half, and place them in your bowl.
Chop up some dill, and add to your bowl.
Mix the ingredients in the bowl, so the tomatoes and dill are coated in the lemon juice.
Add your cucumber noodles to the serving bowl. Allow time for the noodles to marinate, before serving. You can garnish with light seasoning, and Goat or Feta cheese, to add more flair to this dish.
