FRESH Cucumber Salad Recipe
Stay cool as a cucumber with this light, refreshing, citrus-y dish. The cucumber salad only requires four ingredients, which you probably already have cooling and chilling in your fridge.
INGREDIENTS
4 medium to large cucumbers
1 pint of cherry or grape tomatoes
2 juiced lemons
1 clam shell of dill
THE TOOLS
Spiralizer or vegetable peeler
Knife
Cutting board
Citrus juicer
Strainer
Large serving bowl
Directions
First, put a small slit lengthwise down each cucumber. (NOTE: Do not go to more than halfway through).
Next, cut off both ends of the cucumbers. Cut each cucumber into segments, about 3-4 inches, depending on the size of your spiralizer.
Set your blade to desired noodle shape/thickness (on your spiralizer), to make your cucumber 'noodles.' (Ha, I call them noodles, but remember they are supposed to be long, slender, thin spirals of cucumber).
Set the cucumber noodles aside in a strainer while preparing the other ingredients. You may want to press the noodles several times with your hands to get ride of excess water.
Next, cut each tomato in half + place in a large serving bowl. Also, juice some lemons and set aside.
Then, chop up some dill and add to your bowl.
Add the noodles to the serving bowl, and pour the lemon juice over the ingredients in the bowl, and stir everything together. Allow time for the noodles to marinate in the lemon juice before serving.
And finally you are complete.
